(AOC = « Appellation d’Origine Contrôlée » : a label guaranteeing
the origin and the quality of the product)
Born from a traditional know-how adapted to the new techniques of the ciderculture, “Le Cornouaille”, a cider with a label of controlled origin, is produced according to rules enacted in a schedule of conditions approved by the National Institute of the Labels of origin in a decree of March 19th, 1996 (JO n°72 p45-41 - NOR: FCEC9600014D).
The soil
First cider of Bretagne to have a label of guaranteed origin, “Le Cornouaille” is produced on a delimited soil of 38 townships drawing a perfumed ribbon alongside the sea, entwining the rias with a thousand apple trees all around Quimper, the capital of the Cornouaille country.
Features of production
Jewel of the ciderculture craft industry, “Le Cornouaille” is the product of the most extreme rigour at every stage of its elaboration : identified orchards, limited yields, controlled manufacturing processes with a natural effervescence, the set of foam in bottle is natural, the apples are mainly picked up in the hand, analytical controls of each batch before put on the market, a numbered apple-shaped ruff allows to identify this product.
Specific flagrances and flavours
To the eye, “Le Cornouaille” has a limpid aspect, a gilt-orangey shade, a generous foam in glass with nimble and persistent fine bubbles.
To the nose, after good first inviting feelings, we discover an aromatic complexity where we can find floral, fruity or slightly spiced flavours.
In mouth, after a supple attack, we discover a well built structure with a beautiful amplitude becoming rounded in mouth with a dominant soft-bitter taste. The end of mouth is fruity with a very light astringency.
